The 5 days training will take place on 13, 14, 19, 20 and 21 October at the Coop. Olive Santina delle Fate. The classes, taught by experts in the field, are addressed to producers, traders, restaurateurs, agronomists, technicians and enthusiasts who want to maximize the production of table olives of cultivars Itrana.

Last few places available to participate in the training Course for Tasters and Sensory Analysis of Table Olives, organized by the masterpiece of wo in the context of its training activities, in collaboration with the Coop. Santina delle Fate and the Aspol, and addressed to producers, traders, restaurateurs, agronomists, technicians and enthusiasts.

The initiative, which enjoys the patronage of the Municipality of Sonnino, to the XIII Mountain Community of the Monti Ausoni and Aurunci and the Chamber of Commerce of Latina, will take place in Sonnino, the main centre of olive growing in the province of Latina, in the premises of the Coop. Olive Santina delle Fate (Via The Sassa snc. – San Bernardino).

The 5 days training, 25 hours in total, will begin on Friday the 13th of October (15:30 – 20:30), and will continue on Saturday the 14th (8:30 – 13:30), Thursday 19 (15:30 – 20:30), Friday 20 (15:30 – 20:30), Saturday, October 21, (8:30 – 13:30). At the end of the final interview there will be the delivery of certificates to those who have successfully passed the exam.

In the program there are practical tests of taste and insights on the national and community regulatory framework, and on the methods of processing traditional and industrial, aimed at the acquisition of the necessary foundations for the knowledge of the techniques of preparation, product analysis and sensory evaluation of table olives, according to the guidelines of the International Olive oil Council (C. O. I.).

The lessons will be taught by expert teachers: prof. Giulio Scatolini (Panel chief C. O. I., and lecturer, University of Flavours), prof. Maurizio Servili (University of Perugia); the Cosmos Of the Russian (President of Aspol); Alberto Bono (agronomist, expert in the cultivars of the olive itrana); Maurizio Simeone (President of the Consortium for the Protection of the Olive of Gaeta D. O. P.); Tommaso Noviello (agronomist, expert in olive oil, Gaeta).
